Domaine Rapet - Corton Charlemagne Grand Cru 2021
Domaine Rapet is located in Pernand-Vergelesses, in Burgundy . The estate has been known since 1765 and includes 20 hectares of vines in the villages of Pernand-Vergelesses, Savigny-Lès-Beaune, Chorey-Lès-Beaune, Aloxe-Corton and Beaune. Within the vineyard, they set up a reasoned fight against diseases and insects of the vine according to the climatic conditions. An inventory of the operation listing all the elements favoring the diversity of fauna and flora has been carried out.
The Corton-Charlemagne Grand Cru , facing south-west, is planted on silico-calcareous marl in a very steep drop. These shallow soils, made up of friable rocks, are quite light, poor and very stony. The harvest is manual and then the whole Chardonnay grapes are placed in the press where the pressing lasts two hours. After settling for 24 hours at low temperatures, the grape juice is placed in barrels for fermentation, the proportion of new barrels is 30%. Aging on lees with stirring lasts until July, bottling takes place after 12 months of ageing.
