Domaine Roulot - Eau de Vie de Poire
Domaine Roulot is located in Meursault, on the Côte de Beaune in Burgundy. Owned by Jean-Marc Roulot and his sister, Michèle Javouhey Roulot, the estate produces wines as well as eaux-de-vie and fruit liqueurs. The distillation activity began in the middle of the 19th century: the copper still which is used in distillation today belonged to the grandfather and then father of Jean-Marc Roulot, who were then "traveling distillers". The tradition of distillation in the Roulot family, originally, was oriented around the marc de Bourgogne. Today, the range consists of two eaux-de-vie and a liqueur. The estate has been certified in organic farming since 2013, with non-certified biodynamic practices.
The Pear eau-de-vie is made from fermented Yellow Williams Pears, then distilled just once. The eau-de-vie is transferred to a carboy for aging of at least 5 years and up to 8 years.
