The Château Boujac located on the borders of Haute-Garonne and Tarn-et-Garonne covers 31 hectares.
The control of the yields, the grassing of the parcels, the tillage are among the strong options taken by Michelle and Philippe Selle to guarantee the production of Fronton of a high quality and respectful of the environment.
The peculiarity of the castle and the appellation is to cultivate the negrette, a grape brought back from the crusades by the Knights of the Order of Saint John of Jerusalem. The latter owned the vineyards at the time.
Cuvée Eole: 50% Négrette 25% Syrah 25% Cabernet Franc Harvest plots and maturity, crushing, maceration for 48 hours, fermentation with temperature control and finally post-fermentation maceration for 8 to 10 days. The aging is done in vat for 6 to 12 months, then passage in barrels (2 to 3 wines) during a variable duration (minimum 6 months).
