DOMAINE DE CHEVALIER 2017
The Domaine de Chevalier is located in Pessac-Léognan, a sub-region of the Graves appellation in Bordeaux. It is classified Grand Cru Classé of Graves. The Domaine de Chevalier has the particularity of having retained its title of "domain", more common in Burgundy than in Bordeaux. In 1983, the estate passed under its current ownership when it was bought by the Bernard family, who renovated the cellar and extended the vineyard. The estate has around 45 hectares of vines on soils rich in gravel and clay, most of which are devoted to red grape varieties.
Domaine de Chevalier Rouge 2017 is a blend of Cabernet Sauvignon (70%), Merlot (25%) and Petit Verdot (5%). After manual harvesting and a meticulous selection of the berries, the grapes are destemmed and then placed in a thermo-regulated tank by gravity. During alcoholic fermentation, punching down is carried out. The vatting lasts about 3 weeks. The wine is aged in barrels for 18 months, with 4 months on lees and with 35% new barrels.
