The Bimber Distillery, located in the heart of London, England, is renowned for its artisanal and authentic approach to whisky. Founded by enthusiasts, it is committed to producing exceptional Single Malts, rich in character, by applying traditional methods rarely seen in today's industry. The barley used is exclusively grown on a single farm, malted manually on the floor, then hand-crushed before a slow seven-day fermentation in wooden vats handcrafted in their own cooperage. The heating of the small copper stills is done by direct fire, ensuring careful distillation, while the spirit matures in barrels rigorously hand-selected. The entire process, from blending to bottling, is carried out on-site, ensuring optimal quality control. The first Bimber barrels date back to May 26, 2016, and their initial limited edition of 1,000 numbered bottles met with overwhelming success in September 2019, selling out in just three hours. Since 2020, Bimber has expanded its range by offering a varied selection of innovative and refined Single Malts.
The exclusive Re-charred Oak Casks edition highlights a careful selection of American oak barrels re-charred by hand by Bimber's coopers at level No. 4, also called "Alligator char." This intense re-charring process naturally caramelizes the wood sugars while creating a filtering activated charcoal layer on the barrel's surface, imparting the whisky with powerfully sweet, rich, and fruity aromas. This rare and sought-after edition is limited to only 5,000 bottles produced.
