Daftmill is a family farm located in the Howe of Fife, in the Lowlands of Scotland. The farm produces carrots, broccoli, potatoes, grows grains (mainly malting barley) and breed beef cattle. In June 2003, Francis and Ian Cuthbert applied for a building permit to convert the old mill buildings into a distillery. Repairing buildings and installing equipment lasted from 2004 to late 2005 when they finally received their license to start distilling. Apart from the stills (a 3,000-litres still and a 2,000-litres still) and the mash tun which came from the coppersmiths Forsyths in Rothes, all other equipment, work of transformation of the buildings and creation of the distillery were provided by local artisans from the Cupar region. The first whisky was produced on December 16, 2005, making Daftmill the newest distillery to open in Scotland at that time with the first bottles released in May 2018. In the distillery, they use the barley they grow on the farm and water from their own well to make whisky. The distillery operates on a seasonal basis around the farming calendar. During the winter months, when farm chores are less, Francis and Ian brew their whisky, but in the spring, they have to sow barley, plant potatoes and graze the cattle. In the middle of the summer, there is a lull in agricultural work again and they distill in June and July before stopping again for the harvest. This operation was once the norm, but it has not been seen in Scotland for 100 years and as a result a small production of 100 casks is produced each year.
This limited edition of Daftmill 2009 is made from the barley variety Optic which was cultivated in the fields of the farm and harvested the last week of August 2006. The barley is then stored on the farm before being malted in Alloa in the summer of 2007. The first fill Oloroso Sherry butt and three ex-Bourbon barrels (Casks 047/2009, 048/2009, 050/2009 and 052/2009) were chosen by Wine and Spirit Merchants Berry Bros & Rudd. It was distilled and filled in the first two weeks of August 2009, then bottled in 2020. 1,785 bottles were produced.
