Château La Colombière - Les Frontons Flingueurs 2019
Château La Colombière is located on the historic terroirs of Villaudric, in the Fronton appellation in Languedoc. In 1970, Jean-René Chabanon built his cellar, planted the vineyard and created the estate at a place called Bellouguet after having trained with Jules Chauvet. In 1984, François de Driésen bought the estate and reinforced the identity of its wines around the Négrette grape variety. In the early 2000s, his daughter Diane and her husband Philippe Cauvin took over the estate, converting the estate to organic farming using certified biodynamic practices. They are oriented towards plot-based vinifications and cuvées entirely made from Négrette. They discovered in the vineyard pre-phylloxera strains of the white Bouysselet grape and brought this endemic grape back to life.
Les Tontons Flingueurs is a cuvée made with the manually harvested Négrette grape. The grapes are partially destemmed and vatted by gravity. The vinification is natural, without oenological inputs in concrete vats. The vatting by infusion lasts 15 days then the wine is aged in concrete vats for 5 months.
