Domaine Tabordet - Les Petites Aubues 2019
Domaine Tabordet is located in Verdigny-en-Sancerre, in the Loire Valley. Yvon and his brother Pascal took over the operation in 1981, when it only had three hectares. In 2008, their respective sons Gaël and Marius joined them. Today, the vineyard covers 19 hectares in AOC Pouilly-Fumé and Sancerre. They practice organic viticulture but without certification.
Les Petites Aubues is a Pouilly-Fumé made from Sauvignon Blanc grown on the “Petites Eaux Bues” plot at a place called Villiers. The vinification is carried out with indigenous yeasts and the first sulfur is added 1 month after the end of the fermentation to have a total sulfur not exceeding 65 mg / L.
