Ron Abuelo is a rum distillery located in Panama. Ron Abuelo represents the culmination of three generations of rum tradition and pays tribute to Don José Varela Blanco who left Spain in 1908 to establish Panama's first sugar cane plantation. The first rum was produced in 1936. Ron Abuelo takes care of the harvest to the bottling exclusively under his own management and on site. They make a basic long-life syrup or "miel de caña" from the pressed sugarcane juice, then water is added from their own well with yeast cultures grown on site. After fermentation in sugar cane wine, distillation ensues in a single column still. The young rum is then left to mature quietly in small ex-Bourbon oak barrels. The most exclusive expressions are left to mature using the Solera method. After years of maturation, the barrels are carefully selected by batch to form a blend in a larger barrel. The barrel strength is around 65%, so deionized water is added up to 40% with a little sugar for the optimal taste experience.
The Ron Abuelo 'XV Finish Collection' is referring to both the Cognac cask and France. 'Napoleon' is a 15-year-oldexpression aged in its final stages in Napoleon Cognac casks.
