Villa Conchi - Cava Brut
Bodega Villa Conchi is located in Catalonia, in Spain. Villa Conchi was born with the aim of paying tribute to Conchi, the mother of Javier Galarreta, who loved French sparkling wines. Javier Ruiz de Galarreta was convinced that high-level family wineries had great potential for export markets, so he founded a company common export for the high-quality estates of the Rioja Alavesa and other leading wine-producing areas in Spain. Faithful to his initial philosophy, Javier Galarreta has selected excellent vineyards and modern facilities to produce a "different" Cava. Since 2009, he has been traveling around Catalonia looking for partners capable of producing an elegant and fresh sparkling wine. In the heart of the Penedès he finally found the vineyards and the qualities he was looking for to make that style of wine.
The Brut Selección is a blend of Xarel-lo (30%), Parellada (30%), Macabeo (30%) and Chardonnay (10%). The grapes are harvested manually and pressed directly on arrival at the winery. Each variety is fermented separately, then the must is blended and bottled together with the base wine, to which yeast and sugar are added to create the second fermentation. The bottles are kept in underground cellars at constant temperature, in contact with their lees. The Cava is then aged for minimum 12 months in bottle. After this period, the sediments are removed and the liqueur d’expédition is added in order to obtain a Brut style.
