Domaine Samuel Billaud - Les Vaillons 2020
Domaine Samuel Billaud is located in Chablis , in Burgundy . The Billaud family is one of the oldest families of winegrowers in the region, established since 1815. After 20 years spent as winegrowers in the family estate, Samuel Billaud created his own merchant-winemaker . He naturally oriented himself towards the purchase of grapes, taking great care to adjust his choice of vinification and aging to precisely transcribe the qualities of each plot and of the grape variety. This activity is made possible thanks to the relationship of trust built up with partner winegrowers, which allows it to vinify perfectly healthy and ripe Chardonnays. Following the sale of the family estate, he was able to acquire 4 hectares of vines in the most beautiful climates of Chablis, and operates his own vines in the Petit Chablis, Chablis, Chablis Premier Cru Vaillon, Séchet, Mont de Milieu, Montée de Tonnerre, Chablis Grand Cru Vaudésir and Les Clos. The vines are conducted in a reasoned fight .
This Chablis is made from Chardonnay harvested from the Premier Cru “Les Vaillons” . The harvest is manual and the grapes are pressed directly and slowly. The musts are settled at low temperature and fermentation takes place in 450 liter barrels . At the end of ageing, the wine is transferred to stainless steel vats for 4 to 6 months .
