PEYRASSOL - Mediterranean Rosé - BIB 5 Liters 2021
The Commanderie de Peyrassol is located in Flassans-sur-Issole, in Provence . The estate belongs to Vignobles Austruy (which also manages Château Malescasse in Bordeaux, Quinta da Côrte in Portugal, Tenuta Casenuove in Italy and produces the organic French Gin 'Gigi en Provence'). The property dating from the 11th century was exploited in polyculture by various owners until its acquisition in 2001 by Philippe Austruy who will undertake heavy investments there. The 92-hectare vineyard is located in the heart of 900 hectares of southern vegetation composed of truffle oaks, white oaks, olive trees and scrubland. The vines are divided into 63 plots, adapted to each grape variety. No chemical inputs enter into the farming practices of the estate, which is entirely managed according to the strict specifications of organic farming .
Peyrassol IGP Méditerranée is a blend of Cinsault (50%), Grenache (40%), Syrah (8%) and Carignan (2%) . This rosé is made from a direct pressing of 2 to 4 hours. The juice is decanted then fermented in stainless steel vats at low temperature. Each plot is vinified separately. After 2 pre-selection sessions from November then 2 to 3 selection sessions later, the wines are blended and then aged a few months before bottling which takes place from February.
