Domaine Michel Juillot - Mercurey Rouge - 1er Cru - Les Combins 2019
Domaine Michel Juillot is located in Mercurey, in the Côte Chalonnaise in Burgundy . The estate was founded in 1928 and still belongs today to the Juillot family. Laurent Juillot , fourth generation winemaker at the family estate, operates 31 hectares across the Côte Chalonnaise and the Côte de Beaune. The domain integrates a great respect for the environment , with an objective of quality. It has been certified High Environmental Value (HVE) since 2019.
Mercurey Premier Cru Les Combins is made from Pinot Noir grown on clay-limestone soils, light marl, gravel and beige limestone pebbles on the surface. The vines face south. The harvest is manual, the harvest is entirely de-stemmed and fermentation occurs spontaneously with indigenous yeasts in open vats. The vatting lasts 20 days and then the wine is aged for 18 months in oak barrels, 25% of which are new barrels.
