Domaine Béatrice and Pascal Lambert - Chinon - La Croix Boissée 2017
Domaine Béatrice and Pascal Lambert is located in Cravant-les-Côteaux, in the Chinon appellation in the Loire Valley . They cultivate 18 hectares of vines certified in biodynamic agriculture , on 3 distinct types of soil: gravel, clay-limestone and clay with flint. Natural methods are put in place for the elaboration of the wines: the fermentations take place slowly, naturally without adding yeast, without sulfur or any input. The main cellar work (racking, bottling) is carried out according to the phases of the moon and the aging is adapted to the typicality of the terroirs. Béatrice and Pascal Lambert make maximum use of mass-selected vine plants.
Croix Boissée is made from old Cabernet Franc vines (50 to 60 years old) grown on a micaceous limestone terroir. The grapes are harvested manually and sorted on the table in the cellar. After destemming, maceration lasts 30 to 40 days in wooden vats with punching down. The aging lasts 24 months in 500 liter barrels . Its aging potential is 10 to 20 years.
