Cachaca - Abelha Gold Organic
Abelha is a brand of Cachaça produced in Rio de Contas in the Bahia region of Brazil . It was born in 2009 from the union between Marcos Vaccaro (master distiller and creator of the first certified organic cachaça in Brazil) and the Responsible Trading Company group based in the United Kingdom, whose values and motivations are aligned with his own. Together, they are on a mission to train and certify local Brazilian farmers in the production of organic sugar cane, safeguard traditional and natural farming techniques, and create the highest quality organic cachaça . Abelha (“Bee” in Portuguese) is named after the hundreds of Brazilian bees that drink the fresh sugar cane juice during the juice extraction process. It also pays tribute to the hardworking team behind Abelha, who run a self-sufficient, community-based and sustainable farm.
Sugarcane is grown on sandy upland soils where the high temperature differential between day and night, fertile soil and crystal clear spring water allow the growth of high quality sugarcane. The sugar cane fields are cut in sequence by hand depending on the preparation and maturity of the sugar content because once cut, the sugar cane must be pressed for fermentation within 24 hours. After fermentation, the "cachaça vinho" is distilled in traditional stills (copper pot) of 800 liters.
Abelha Gold is aged for 3 years in 250 liter Garapeira (Brazilian ash) barrels.
