DOMAINE DE CHEVALIER 2014
Domaine de Chevalier is located in Pessac-Lé ognan, a sub-region of the Graves appellation in Bordeaux. It is classified Grand Cru Classé de Graves . The Domaine de Chevalier has the particularity of having kept its title of "domain", more common in Burgundy than in Bordeaux. In 1983, the estate passed under its current ownership when it was bought by the Bernard family , who renovated the cellar and enlarged the vineyard. The estate has around 45 hectares of vines on soils rich in gravel and clay, most of which is devoted to red grape varieties.
Domaine de Chevalier Rouge 2014 is a blend of Cabernet Sauvignon (65%), Merlot (30%) and Petit Verdot (5%) . After the manual harvest and a meticulous selection of the berries, the grapes are destemmed and then placed in thermo-regulated vats by gravity. During the alcoholic fermentation, pigeages are carried out. The vatting lasts about 3 weeks. The wine is aged in barrels for 18 months , with 4 months on the lees and with 35% new barrels .
