The Stauning Distillery is located in Denmark . It was founded in May 2005 by nine Danish whiskey enthusiasts: a doctor, a cook, a butcher, a teacher, a helicopter pilot and four engineers. The idea was originally to create a whiskey resembling the peated whiskey produced on the Isle of Islay, Scotland. The first distillation took place in August 2006 and the following months the test production continued with continuous improvements and streamlining of the process. In the fall of 2006, the nine owners met whiskey expert Jim Murray and presented their new make to him for a tasting. Very enthusiastic, he recommends that they increase their production. Production has been increased to 6,000 to 8,000 liters of whiskey per year, compared to 200 to 400 liters initially planned by the owners.
The grain (rye and barley) is bought locally and the malting takes place on the ground, as in the Scottish tradition. The malt is then dried in a kiln using hot air blown from below. To produce a smoky whisky, local peat from the nearby bog is used to smoke the malted grains. The grain is then crushed, crushed and set aside to mature for 3 days. Once this process is complete, the must is first distilled in a 1,000 liter still and then in a 600 liter still. After the double distillation, the new make is ready. It is put in oak barrels where it matures for at least 3 years before finally being bottled as a whiskey.
Curious is Stauning Distillery's new make . This is the base alcohol produced from rye (51%) and barley (49%) malted, then smoked over peat and heather before aging.
