Wakatsuru - Far East Of Peat - Fourth Batch - 50%
The Saburomaru Distillery is located in the city of Tonami, in Toyama prefecture in Japan . It was built on the premises of Wakatsuru Shuzo, which was established in 1862. Today, annual production is limited to around 25 barrels since whiskey is distilled in summer, and winter is dedicated to brewing sake. Wakatsuru Shuzo uses malt produced in the UK, heavily peated at 50 ppm . The fermentation techniques for the development of whiskey are inspired by those for the production of sake; they use brewer's yeast and whiskey yeast for a mixed fermentation in order to obtain fruity aromas, but also yeast strains developed especially with the University of the region. A wide variety of barrels are put in place to allow quality aging: Bourbon and Sherry barrels, red wine barrels and various other types of barrels, including those from Mizunara, a local wood.
Far East of Peat Batch 4 is a blend of Scottish malts, with a selection of 2018 distilled peated malts from the Saburomaru distillery and lightly peated malts aged in Bourbon barrels from the Eigashima brewery.
