Domaine Justin Girardin - Chassagne-Montrachet - 1er Cru Morgeot 2021
Domaine Justin Girardin is located in Santenay, in the Côte de Beaune in Burgundy . The Girardin family has been present in Burgundy since 1570 and Justin represents the 13th generation to operate the family estate of 17 hectares. The vineyard developed from 1945: many lands were acquired in the form of meadows, fields or wasteland and replanted with vines. Today, the plots extend over the entire Côte de Beaune and the vines are replanted regularly by mass selection. The vineyard is managed according to the principles of biodynamics without certification.
The Chassagne-Montrachet Premier Cru Morgeot is made from Pinot Noir whose average age of the vine is 25 years. After the manual harvest, the grapes are sorted 3 times then destemmed and put in vats for a cold maceration of 5 to 7 days. Fermentation begins spontaneously with native yeasts, then maceration lasts 15 to 20 days with a few punching downs and several pumping overs per day. The wine is aged for 15 months in oak barrels from Allier and the Vosges, 25% of which are new .
