The Bimber Distillery, proudly located in the heart of London, England, is a key reference in the world of high-quality artisanal whisky. Founded by two enthusiasts, Ewelina Chruszczyk and Dairusz Plazewski, this distillery is dedicated to crafting exceptional Single Malts, combining character and authenticity through rare and carefully preserved traditional methods. All the barley used comes from a single farm, ensuring optimal traceability and quality. The barley is floor-malted using ancient techniques, then manually crushed and slowly fermented for seven days in wooden vats, handcrafted in their own cooperage. Distillation takes place in small copper stills heated by direct fire, a now rare practice that gives the spirit an incomparable aromatic richness. The whisky then patiently matures in hand-selected casks before being blended and bottled on-site, guaranteeing consistent quality and unique expertise. The first Bimber casks were filled on May 26, 2016, with the first commercial release three years later, in September 2019: a limited edition of 1,000 hand-numbered bottles that sold out in just three hours. Since 2020, Bimber has expanded its range with innovative and remarkably refined Single Malts.
The First Peated is a limited edition from the very first production of peated whiskies by the distillery, a feat that delights lovers of smoky aromas. Only 1,140 bottles were released, making this batch a true collector's item for fans of fine and elegant peated whisky.
