Domaine de la Chevalerie - Grand-Mont 2016
The Domaine de la Chevalerie is located in Restigné , in the Bourgueil appellation, in the Loire Valley. The Chivalry is a long family story, which began nearly 400 years ago. From this line of winegrowers, the family inherited invaluable know-how and in-depth knowledge of each of the estate's plots. Today the adventure continues with Pierre Caslot and his children, two generations united to exploit this 38-hectare estate and perpetuate the family tradition. They cultivate Cabernet Franc vines, which are 30 to 70 years old on average. Anxious to preserve the essential balance of the ecosystem, the Caslots work according to organic (certified since 2008) and biodynamic ( certified since 2012) principles.
Grand-Mont is made from Cabernet Franc grown on the limestone rock of a tufa hillside. After the manual harvest, the bunches are sorted then de-stemmed and the berries are sorted a second time. Fermentation occurs with indigenous yeasts. The aging is carried out in old demi-muids . This wine will keep for 15 to 20 years.
