The Launceston Distillery is located in the city of Launceston in Tasmania . Tasmania has a reputation for producing high quality whiskies, thanks to its unique climate, which is ideal for barley production and whiskey aging. Launceston's first whiskey distillery, the Caledonian Distillery, was established in 1824 but in 1839 the Distillation Prohibition Act was enacted, prohibiting the distillation of spirits across the island. Since 1992, when the law was changed to allow the first modern distillery, Hobart has welcomed a growing number of producers. The Launceston Distillery was the first to obtain a production license since the Caledonian closed almost 180 years ago. The family-owned distillery was established in 2018 and is based in Hangar 17 at Launceston Airport, the state's oldest commercial aviation building. The equipment, comprising a 1,600 liter wash still and a 700 liter still, was manufactured by the world's leading still manufacturer, Peter Bailly of Knapp Lewer Engineering.
Launceston whiskey is made from local Tasmanian barley , and the water used in the production process comes from the nearby River Tamar . The whiskey is aged in a variety of American and European oak barrels, having contained Bourbon, Apera (a type of Australian sherry) or Tawny (a type of Australian Port).
This whiskey was distilled from a blend of malted Tasmanian barley and richly peated Scotch malt which was aged in Bourbon and Tawny casks . 700 bottles were produced.
