Cuatro Gallos is a company founded by four brothers passionate about the artisanal production of Pisco , a Peruvian alcoholic drink. They started with a small production for their family and friends, but quickly gained a reputation for the exceptional quality of their grapes. Today, they cultivate their own vines and produce Pisco in an artisanal way for consumers around the world. The Cuatro Gallos vineyards are located in the El Carmen farm in the San Juan Bautista district, located in Peru 's Ica Valley. This place is historically known for the quality of its wines and its piscos, obtained thanks to its warm climate during the day and cold at night, and its clay soil.
The bunches of grapes are harvested from the vineyard. In a destemming-pressing machine, the grapes are crushed so that the must and grape juice flow out and then fermentation begins. The newly obtained wine is placed in a copper still and heated. Boiling wine releases volatile substances in the form of vapor which immediately condenses. From the distillate obtained, the main fraction called "heart of heating" becomes the Pisco Cuatro Gallos. The Pisco obtained is stored in stainless steel tanks for a minimum period of 8 months.
