The Cuatro Gallos vineyards are located in the El Carmen farm in the San Juan Bautista district, located in Peru 's Ica Valley. Pisco "Mosto Verde" is a particular variety of Pisco, produced from grapes that are not fully fermented , which means that the grape must still contains a small amount of residual sugar when distilled. This results in a sweeter and more aromatic Pisco than other varieties of Pisco. The distillation process of Pisco "Mosto Verde" is also different: it is distilled at low temperature to avoid the formation of certain compounds that could alter the flavor of Pisco.
