Domaine Jonathan Didier Pabiot - Léon 2021
Domaine Jonathan Didier Pabiot is located in Pouilly-sur-Loire, in the Loire Valley. In 2005, Jonathan Pabiot , former motocross champion, took over the 3.5 hectares of vines from his father Didier. Today, the vineyard extends over 20 hectares on several types of soil, mainly limestone, caillottes and white land. The vines are cultivated in an artisanal way, with great attention to the importance of respecting plants and living things: all the plots have been organic since 2006 and certified biodynamic since 2016.
The Léon cuvée comes from a blend of older plots of Sauvignon Blanc , from the localities Les Champs de Cris, Asserts, Villiers and Les Champs Piots. The vines, whose age varies from 10 to 50 years, are planted on clay-limestone and flint clay soils in the commune of Pouilly sur Loire. The wine is aged for 12 to 18 months on the lees , in stainless steel and concrete vats .
