Château Simone - Red - Magnum 2020
Château Simone is located in the town of Meyreuil, in the small appellation of Palette in Provence . It has belonged to the Rougier family since 1830. Its exposed location on the northern slope of the Montaiguet massif, in a cirque protected from the winds and crossed by the Arc, gives it the benefit of a particular microclimate . The vineyard is influenced by the biodiversity of the forest environment, the supply of humidity from the river and its mass of greenery, the direction and attenuation of the force of the winds.
Château Simone Rouge is a blend of Grenache (45%), Mourvèdre (30%), Cinsault (5%) and 20% Syrah, Castet, Manosquin, Carignan, various Muscats. The harvest is carried out exclusively by hand, at full maturity with sorting of the grapes. Fermentation occurs with indigenous yeasts. During vinification with destemming, light crushing is carried out and vatting in small vats lasts 15 to 21 days, with pumping over. The aging is entirely in wood ; in small tuns for 8 months, then 1 year in oak barrels of different ages.
