Mas Karolina - Côtes du Roussillon Villages Rouge 2021
Mas Karolina is located in Saint-Paul de Fenouillet, in Roussillon . The estate belongs to Caroline Bonville , a winemaker trained in the vinification of American and South African wines. The Mas Karolina vineyard is located in the foothills of the Pyrenees, in and around Maury. Mainly placed under the influence of the Mediterranean climate, it benefits from sunshine and weather conditions favorable to the production of great wines. The vines are grown using certified organic farming .
Côtes du Roussillon Villages is a blend of Grenache Noir (50%), Syrah (30 to 40%) and Carignan Noir (10 to 20%) . The age of the vines is 50 years for Grenache and Carignan, and 30 years for Syrah. They come from three terroirs; red marls in Maury, schists in Rasiguères and granite in Lesquerde. After the manual harvest, the harvest is destemmed then sorted on a vibrating table. At the start of fermentation, intense extractions are carried out with unloading and pumping over. Maceration lasts 2 to 3 weeks. The wine is aged for 12 months in 300, 400 and 500 liter barrels , with 15 to 20% new barrels.
