Domaine Laurent Tribut Dauvissat - Chablis 2021
Domaine Laurent Tribut is located in Poinchy in the Chablis appellation, in Burgundy . It was created in 1987 by Laurent Tribut , the husband of Marie-Clothilde Dauvissat , a very large family of winegrowers. Laurent began by making his wines in the cellars of the Dauvissat family for 10 years before setting up his own cellar. Years earlier, the Dauvissats had purchased excellent vineyards in Chablis, adjoining their own Premiers Crus to give their children the opportunity to become winegrowers, which is how Marie-Clothilde and Laurent Tribut recovered these vineyards. Today, he cultivates 8 hectares of vines, mainly in Chablis Villages but also has a few Premier Cru plots in Beauroy, Montmains and Côte de Léchet . His children, Solange, Adeline and Gabriel joined the family business as talented winemakers in their own right. They follow traditional methods of harvesting and fermenting Dauvissat. The vineyard is managed using sustainable agriculture .
Chablis is made from Chardonnay from 5 different plots over 4 hectares and whose average age is 30 years. The whole bunches are delicately pressed directly. Fermentation takes place with native yeasts in stainless steel vats. Aging lasts 6 months in stainless steel vats , then 12 months in pieces of several passages .
