Sidre Brut - Eric Bordelet 2022
Originally a sommelier, Éric Bordelet took over the family business in 1992 after a long apprenticeship with big names in the restaurant and wine world. He owns 23 hectares of orchards (cider apples, Poiré pears and corms) certified in organic farming since 1996 supplemented by biodynamic soils. Its farm is located at Château de Hauteville, in southern Normandy , on the Armoricain massif in the extension of Domfrontais on the borders of Mayenne and Orne. He grows around thirty varieties of apples, around twenty varieties of perry pears and eight varieties of corms.
Manual harvesting is selective according to the maturity of the fruit. The processing is done with respect for each fruit, then they are assembled, coarsely crushed, delicately pressed before settling and drawing off the juice. Fermentation, in the ancestral way, is carried out in vats then bottling takes place over several weeks or even months depending on the vintages with more or less residual sugars.
Sidre Brut is made from 20 different varieties of apples , sweet, bitter and sour.
