Domaine Patrick Baudouin - Bellevue - Savennières 2021
Domaine Patrick Baudouin has thirteen hectares of vines on the “Anjou noir” terroirs, to the west of Anjou , in the Loire Valley. The soil is composed of schist, sandstone, volcanic rocks from the very old Armorican base. In the vineyard; certified organic farming , constant search for the best human labor/biotope ratio, for non-destructive and sustainable cultivation. Horse work throughout the estate, trees, eco-construction... The range is made up of Chenins de Savennières, Quarts de Chaume, dry and semi-dry white Anjous, and Côteaux du Layon sweet, red Anjous from Cabernets. The cellar, built with noble materials in 1910, has a neat, harmonious and functional architecture.
Savennières Bellevue is made from Chenin Blanc , planted in 2009. Vinification is carried out without sulfur until the first racking. Pressing is gentle, with selection of juices then natural settling and stabilization on fine lees. The alcoholic and malolactic fermentations are slow and the aging takes place in Burgundian barrels of 400 and 228 liters, new and of several wines.
