Domaine Dupont is located in Victot-Pontfol, in the heart of the Pays d'Auge in Calvados . The Dupont family has been established since 1887, and the fourth generation now produces ciders, Normandy pommeau and Calvados. For several decades, Domaine Dupont, which extends over 30 hectares of orchards, has been committed to a quality approach; the use of manual sorting of apples and work with an oenologist practiced on the property are rarely encountered in the development of cider products. The quality of the fruit is an essential step.
The cider intended for Calvados is aged for 6 months on its fine lees to enrich its aromatic expression. After distillation, the Calvados is aged in barrels: in new oak barrels with gentle heating for 3 months where the Calvados is enriched with small vanilla notes, then in older barrels for a long aging where it intensifies and becomes more complex.
Calvados Hors d'Âge is made from a blend of bittersweet apples (80%) and tart apples (20%). The apples are mixed, crushed and pressed. The apple juice ferments completely to produce the cider to be distilled. Double distillation takes place one month after the cider fermentation process. Aging lasts a minimum of 6 years , in 400-litre toasted oak barrels, 25% of which are new.
