Domaine GANEVAT - Plein Sud 2023
Domaine Jean-François Ganevat is located in La Combe de Rotalier in the Jura , France. The estate has been a family property since 1650 and is currently run by Jean-François Ganevat , who trained and worked until 1998 at Domaine Jean-Marc Morey in Chassagne-Montrachet, before returning to his family estate. Ganevat's production is small, but made up of around forty different vintages aimed at highlighting the terroir, the grape variety or the winemaking style. The 13-hectare estate has been certified biodynamic since 2014. Jean-François Ganevat uses ancient and individualized winemaking techniques: destemming is done by hand, no new oak is used, the white wines are aged on lees for a minimum of two years and, since 2006, it has completely eradicated the use of sulfur.
The estate also sources grapes from Alsace, Savoie and Beaujolais for the production of vintages under the Vin de France appellation. These vintages, blended with purchased grapes and those from the estate, allow Jean-François Ganevat and his wife Anne to use all varieties of indigenous grape varieties and to produce unique, declassified wines.
Plein Sud is made entirely from Trousseau , grown on a terroir of white marl, scree and gravel. The vines, which are between 15 and 60 years old, are planted on a steep hillside, facing due south . The Intracellular fermentation is followed by gentle maceration. The wine is aged for 1 year in a truncated cone-shaped vat .
