Domaine Gauby, located north-west of Perpignan, covers approximately 85 hectares, including 45 hectares of vines up to 120 years old, and 40 hectares of meadows, oak forests and scrubland of incredible and unique aromatic complexity. An environment that is still very well preserved, wild, arid, steep and hilly, sitting on soils made up of limestones, marls and schists.
The grape varieties used to make this wine are: Grenache noir 45% (around fifty years old), Carignan 45% (over 120 years old), Mourvèdre 5% (around twenty years old) and Syrah 5% (about fifteen years). The harvest is manual in crates with sorting in the cellar on the table. The vinification is traditional: 100% de-stemming, maceration 2 to 4 weeks. The aging lasts 30 months, in barrels.
On tasting, the attack on the palate is supple, on red fruits, spicy. Remarkable finesse and length characterize this wine.
