Zacapa is a rum factory in Guatemala that is particularly famous today ... almost mythical. The specificity of this house is that they use concentrated cane juice and natural yeasts extracted from pineapple. Once fermented, the juices are distilled in a single-column copper still and then the eaux-de-vie are transported to be aged in the cellars located at more than 2300m of altitude.
Zacapa Solera 23 rum is Zacapa's original and iconic rum, undeniably high-end rum. It is a blend of Zacapa rums aged between 6 and 23 years in a solera of American bourbon casks, European wine and Spanish sherry. This rum is aged according to an ancestral method imported from Spain. In a solera system, the barrels are organized into levels, from the youngest to the oldest. Thus, the young rums are sung at the highest level and then gradually, the part of the rums evaporated in the lower floors (part of the angels) is completed by the rums of the upper floors. Thus rum goes down the barrel stages as it gets older and the level closest to the ground, called solera, is a mix of rum of different ages.
