Anne et Jean-François GANEVAT - J'en veux encore 2018
Ganevat is a wine producer located in La Combe in the Jura. The estate has been a family business since 1650 and is currently managed by Anne and Jean-François Ganevat, who had previously trained and worked at Domaine Jean-Marc Morey in Chassagne-Montrachet.
The 8.5 hectare estate is certified biodynamic and planted in 17 different local red and white varieties, including rare varieties such as Petit Béclan, Gros Béclan, Gueuche, Seyve-Villard, Raven, Portugais Bleu, Enfariné, Argant et Poulsard White.
If the domain produces AOP Côtes du Jura wines with a single grape variety from the domain's fruits, it also sources wine grapes from Alsace, Savoie and Beaujolais to make cuvées with the Vin de France appellation. These cuvées, mixed with grapes bought and grown on the property, allow the winemaker to use all the native varieties and to make unique wines, although declassified.
Jean-François uses old and individualized vinification techniques. He destemmed by hand, did not use new oak, aged white wines on the lees for at least two years and, in 2006, he decided to completely eradicate the use of sulfur.
I want more !!! is a blend of Pinot Noir and Pinot Gris, fermented with indigenous yeasts and aged for 12 months in frustoconical vats. The wine is bottled unfiltered, not fined and without added sulphites. A wine on fruit between finesse and gluttony!
