Domaine DUJAC - Morey Saint Denis - Blanc 2018
Domaine Dujac is based on the Morey-Saint-Denis appellation in Burgundy. The estate was founded in 1968 by Jacques Seysses, who had spent the previous years traveling through Burgundy to learn the business from great estates. He bought a small dilapidated property of 5 hectares in Morey-Saint-Denis, the Graillet estate, and planted Pinot Noir and Chardonnay there. Dujac changes the name of the estate and enlarges it by acquiring plots in Clos de la Roche, Clos St Denis and north of Bonnes-Mares. The estate also expanded in 2005, taking control of plots in Romanée-Saint-Vivantand Chambertin. Over the years, the 15.5-hectare estate has thus extended outside the historic establishment of Morey-Saint-Denis and produces wines both in Côte de Nuits and in Côte de Beaune after the takeover, in 2014, of vines rented in Puligny-Montrachet (1st Crus Folatières and Combettes). In 1998, Jérémy Seysses joined his father at the estate, followed by his wife Diana in 2001 and his brother Alec in 2003. The vineyard has been certified in organic farming since 2011. Maison Dujac Fils & Père is the négoce company created by Jérémy and Jacques Seysses in 2005 with the aim of creating more accessible wines with an emphasis on fruit. These wines meet the same qualitative requirements as those of the Domaine, and are vinified by the family.
Since the 1960s, Dujac has made some small changes to his style of winemaking. Less new oak is used for younger wines, and the cellar is now air conditioned to allow subsequent malolactic fermentation. Traditionally, the pressing of whole bunches was used, but now the grapes undergo a small destemming if the ripeness levels are not high enough.
