La Spinetta - Bricco Quaglia - Moscato d'Asti 2020
La Spinetta is located in Piedmont, Italy. The estate was created in 1977 by the Rivetti family, with production initially focused on Moscato d’Asti. La Spinetta's vines are at least 35 years-old and no chemical fertilizers or pesticides are used: 75% of the vineyards are farmed biodynamically.
The Moscato d’Asti Bricco Quaglia is made entirely from Moscato Bianco, cultivated on the Bricco Quaglia area, at 300 metres above sea level composed of calcareous and sandy soils. Muscat grape juice is transferred to pressurisation tank. Yeast then is added, but the tank is not necessarily sealed as carbon dioxide is only trapped when fermentation is nearly finished to achieve proper level of carbonation. When desired level of alcohol is reached (4.5% to 5.5%), fermentation is interrupted by chilling the wine. Second fermentation takes place in a pressurised tank with selected yeasts. The temperature is increased (20˚C). Fermentation is stopped when foam begins to form and the alcohol reaches between 7% to 9.5% with the average residual sugar levels of approximately 100g/L.
