The Saint-James Distillery, emblematic of Martinique, embodies the excellence of Caribbean agricole rum. Founded thanks to the vision of Reverend Edmond Lefébure, a passionate chemist and Superior Father at the Brothers of Charity convent, this distillery has harnessed the tremendous potential of eaux-de-vie derived from sugarcane grown in the immediate vicinity of its establishment. In 1973, the prestigious Cointreau house took over the reins of Saint-James Rums, centralizing all production in Sainte-Marie. Since 2003, the distillery has belonged to La Martiniquaise, thus guaranteeing traditional know-how and a quality standard recognized internationally.
Saint James rum is produced according to the rigorous method of fermentation followed by distillation in a Creole column from pure sugarcane juice, a process certified and guaranteed by the controlled designation of origin A.O.C Rhum de la Martinique. This method imparts each rum with exceptional aromatic richness and perfect suitability for aging in French oak barrels. Ripe fruits, spices, and woody notes reveal themselves with finesse and complexity. Strictly no sweetening additives are added, thus ensuring the purity and authenticity of each bottle. Committed to a sustainable economy approach, the distillery optimizes its ecological footprint: local plantations minimize CO2 emissions related to transport, bagasse is used as a renewable energy source or composted, while vinasse is recycled to irrigate sugarcane fields, illustrating responsible and innovative management.
