TROIS RIVIERES - 14 years old - Single Cask 2005 - Cask SE-11-1 - 42%
The Plantation of Trois Rivières is a true icon of the historical and cultural heritage of Martinique, recognized worldwide for its exceptional expertise. Since 1660, Nicolas Fouquet, superintendent of King Louis XIV, acquired 2,000 hectares of land located in the south of the island, thus laying the foundations of a prestigious agricultural adventure. In 1785, it was Etienne Isaïe Marraud Des Grottes, a powerful landowner from the north of the island, who took over these emblematic lands, integrating artisanal rum production into the local sugar tradition. Throughout the 18th and 19th centuries, the plantation specialized in sugar cane cultivation, before dedicating itself, from the beginning of the 20th century, to the production of Agricole rum, which became its exclusive production from 1940 onwards. The Trois Rivières distillery was bought in 1994 by the B.B.S. company, already owner of the prestigious La Mauny rums. In 1996, Trois Rivières proudly obtained the AOC label, the Martinican Controlled Designation of Origin, a prestigious guarantee of quality and authenticity. To this day, it is the only rum in the world to benefit from this Protected Designation of Origin. The name Trois Rivières pays tribute to the three major rivers that cross and irrigate the sugar cane fields: Oman, Bois d’Inde, and Saint Pierre.
The artisanal manufacturing process begins with the careful harvesting of sugar cane in February, a period during which their sugar content is optimal. The canes are then cut and crushed within less than 24 hours; the extracted juice, called vesou, is transferred into large open vats for fermentation lasting about 24 to 30 hours. Thanks to the action of natural yeasts, the juice transforms into cane wine before being distilled in a traditional Creole column still, ensuring the pure and intense expression of aromas. The rum is then aged in French oak barrels (with a maximum capacity of 650 liters) for at least 3 years, giving it finesse, complexity, and balance.
This unique cask of aged rum, referenced (#S-E11-1), was carefully selected by Daniel Baudin, cellar master recognized for his expertise and passion. This precious rum was placed in cask on June 30, 2005, in a French Limousin oak barrel that previously contained Cognac, before being carefully bottled on December 10, 2019, revealing an aromatic profile of rare elegance and depth.
