SAVANNA - Rhum blanc - Creol 52 - Cannes Bois Rouges - Batch n°5 - Bottled 2021 - 52 %
The Savanna Distillery is located on Reunion Island. It was designed and produced by Emile Hugot between 1948 and 1950. At the time, located in Saint Paul, it was annexed to the sugar factory of the same name. In 1982, the Savanna Distillery acquired a distillation workshop whose productions are intended only for the manufacture of light rum for export, following the signing of a major rum supply contract with a German customer leader in its market. This acquisition was the trigger for the development of its rum technology, which increased, from that year on, the diversification and quality of its productions. Today, the Savanna Distillery exports the majority of its rum production to professionals. Like many rum factories, the Savanna Distillery is equipped with a fragmented fermentation, also called a "mother tank" process, made up of 8 fermenters of 100 m3 and all of its satellites. This fragmentation is synonymous with obtaining a high-quality product.
Savanna Créol is made from Bois-Rouge canes harvested in 2019. The traditional fermentation lasts 2 days, and the distillation is carried out in a copper column. 1,400 bottles were produced.
