Clos du Moulin Aux Moines - Beaune 1er Cru Les Cent Vignes 2017
Clos du Moulin aux Moines is located in Auxey-Duresses, on the Côte de Beaune in Burgundy. High place in the history of Burgundy, heritage of the monks, this mythical enclosure was created in 962 by the Abbey of Cluny. The Clos du Moulin Aux Moines is the historic plot that gave its name to the estate. Protected by a long stone wall, hence its name Clos, it is bordered by the Cloux stream at the bottom. On the upper part, the soils are rich in red clay and limestone with the outcropping rock while on the bottom of the Clos, it is found deeper at around 6 meters. The estate has belonged to the Andrieu family since 2008 and is managed by Willy Roulendes. The 15-hectares vineyards, conducted in certified organic farming, are spread over the appellations of Auxey-Duresses, Monthélie, Pernand-Vergelesses, Pommard, Saint-Romain and Bourgogne AOC.
The harvest is manual and is received in perforated crates of 18 kg maximum. During this harvest, a first sorting is done in the vineyard, two others are made on a sorting table. For the vinification, Le Clos du Moulin aux Moines respects the Burgundian tradition: the red wines are mainly vinified in concrete vats and the whites in barrels and barrels. Fermentation starts according to its natural rhythm for a period ranging from 8 to 12 days. The aging period varies between 12 and 18 months depending on the appellation and the vintage. To avoid marking their wines, the estate favors barrels of no more than 15% new French oak.
The Beaune Premier Cru Les Cents Vignes is made from Pinot Noir. The majority of the harvest is destemmed and then put into cold pre-fermentation maceration. The wine is aged for 20 to 22 months in oak barrels, 10 to 20% of which are new.
