Domaine Sylvie Spielmann - Gypse Terroir Unique 2017
Domaine Sylvie Spielmann is located in Bergheim, Alsace . The history of the estate is linked to the old gypsum quarry which was operated by the family for more than a century through galleries which descended 50 meters underground. It is the second generation of the Spielmann family who undertakes to cultivate the vine on this soil with a personality marked by Gypsum since its 9 hectares mainly extend around this old quarry which is now filled in. After studying viticulture in Champagne and Burgundy, Sylvie Spielmann flew to California and then to Australia before returning to the family estate. Domaine Sylvie Spielmann operates two Lieux-dits classified as Alsace Grand Cru: Grand Cru Altenberg de Bergheim and Grand Cru Kanzlerberg. From a perspective of quality and respect for the environment, the estate has been committed to a guaranteed biodynamic cultivation approach since 1999.
Gypse is a wine of complantation of Pinot Blanc, Pinot Gris and Pinot Noir planted in 2004 in the heart of the old gypsum quarry composed of gray and black marls. The manual harvest took place on September 17, 2018. After traditional vinification with indigenous yeasts, the wine is aged on fine lees for 8 months . This dry wine contains very little residual sugar (3.3 g/L).
