Domaine Pattes Loup - Chablis Vent d'Ange - Late Mise 2019
Domaine Pattes Loup is located in Courgis , in the Chablis region of Burgundy . Thomas Pico discovered a passion for viticulture very early on, growing up surrounded by a winegrower father and grandfather. He studied viticulture and oenology in Beaune and then returned to the family Domaine du Bois d'Yver in 2004. A year later, in 2005, Thomas took over 8 hectares of vines from the family estate and also began to plant his own vines in the locality called "Pattes Loup" , hence the name of the Domaine.
The first vintage under the Domaine Pattes Loup was bottled in 2006. Today, Thomas operates 25 hectares of vines organically in the village of Courgis. The Domaine was certified organic in 2009. Thomas works a meticulous approach, focused on respecting nature in the vineyard, with a thoughtful style of winemaking, unique to Chablis.
The Chablis Vent d'Ange Mise Tardive comes from the localities "Pattes Loup", "Les Menardes" and "Les Malentes". The grapes come from the 2019 vintage, but the bottling was later than on the classic cuvée, aged 3 years.
