Domaine Bernard Baudry - Le Clos Guillot 2019
Domaine Bernard Baudry is located in Cravant-les-Côteaux, in the Chinon appellation in the Loire Valley . Coming from a family of winegrowers from the village, Bernard Baudry started out as a wine consultant in the Tours laboratory after studying oenology in Beaune. This formative experience lasted five years before he decided to set up on his own in 1975 at the head of a small 2-hectare estate. Matthieu, his son, studied in Mâconnais then in Bordeaux. After a year of training in Tasmania and then in California, he decided to join the family estate in 2000. The estate now has 32 hectares of vines whose variety of soils (gravel, sand, limestone, silica and clay) make it possible to produce parcel vinification. The vineyard has always been maintained using methods that respect the environment and is now conducted in certified organic farming since 2006.
Clos Guillot is made from Cabernet Franc grown on a clay limestone hillside at the top and composed of yellow tufa at the bottom of the plot. The vines were planted between 1993 and 2000. After manual harvesting, fermentation lasts 15 days in concrete or wooden vats. The aging lasts 12 months in barrels of 2 to 5 wines, then 9 months in uncoated cement vats .
