La Bastide Saint Dominique - Cairanne - The 2 Trees 2020
La Bastide Saint Dominique is located in Courthézon, in the Southern Rhône . Built around an old 16th century chapel, the estate was created in 1976 by Gérard and Marie-Claude Bonnet with a handful of plots. Over time and with a strong will, they develop their vineyard which today reaches 50 hectares in production in protected designations of origin Côtes du Rhône, Côtes du Rhône Villages, Cairanne, Châteauneuf du Pape and IGP Méditerranée. Since 1999, their son Éric has been making wine and marketing his production by combining traditional know-how and a modern approach to viticulture. The estate has been certified in organic farming since 2014.
Cairanne is a blend of Grenache (25%), Syrah (25%), Carignan (25%) and Mourvèdre (25%) grown on clay-limestone soils. The grapes are fermented in stainless steel vats for 18 days. Vinification is carried out by grape varieties in vats with daily punching down and pumping over for extraction. Carignan aging lasts 12 months in demi-muid. The aging of the other grape varieties lasts 12 months in vats before blending and bottling.
