Cognac Pasquet - The organic 07 - 7 years old - 40%
The Maison de Cognac Pasquet is located at a place called Chez Ferchaud-Eraville, in Bellevigne in Charente . In 1970, Jean-Luc Pasquet inherited from his uncle Albert and became responsible for the family estate comprising 8 hectares of vines in Grande and Petite Champagne. The estate expands to 14 hectares, cultivated since 1995 in certified organic farming . The 20 hectoliter still makes it possible to obtain fine and rich eaux-de-vie resulting from a double distillation which will then be aged for a minimum of 4 years, i.e. 2 more years of legal aging in wood to obtain the denomination "Cognac ". The House is now operated by Jean Pasquet and his wife Amy, of American origin.
Organic 07 is a cognac made from Ugni Blanc grown in Petite and Grande Champagne, and aged for a minimum of 7 years in oak barrels.
