Les Cailloux du Paradis is owned by Claude Courtois and is located in Soings-en-Sologne , next to Cheverny . Claude Courtois manages the vineyard with his sons, Etienne and Julien, and cultivates 13 hectares of vines of Gamay, Cabernet Franc, Côt (Malbec) and Cabernet Sauvignon in red as well as Sauvignon Blanc and Pineau d'Aunis and other local grape varieties . They work with respect for nature , without chemical intervention and using atypical winemaking techniques.
Racines is the domain's great cuvée . It is a blend of several grape varieties, which the Courtois do not mention, which undergoes a long maceration and aging for 18 months in barrels .
