Bénédicte and Stéphane TISSOT - Savagnin Ouillé 2020
The Domaine Stéphane Tissot has become for years now, an essential reference for Jura wines. Maurice Tissot, father of André Tissot and grandfather of Stéphane, owned 3 hectares of vines (vinified in a cooperative) and 25 hectares of agricultural land. He decided in 1956 to plant vines for each of his four sons: Jacques, Jean-Louis, Daniel and André. The latter inherited 38 ares, which would become the André and Mireille Tissot estate, now run by their son Stéphane.
Stéphane Tissot is a rebellious spirit who appropriates traditions while sublimating them. After studying Viticulture/Oenology, he joined his father at the family estate in 1989. He gradually took over the management of the estate and adopted organic farming in 1999, then switched to biodynamics in 2004. They now own 43 hectares planted with classic Jura grape varieties: Savagnin, Chardonnay, Poulsard, Trousseau and Pinot Noir.
This cuvée is made from Savagnin . Savagnin belongs to the Traminer family (Gewurztraminer, Traminer Rose). It is vinified with topping up to keep its fruity profile, and is bottled after 6 months of ageing.
Grape variety: 100% Savagnin
