Champagne Gondé-Rousseaux is located in Taissy, in the Montagne de Reims in Champagne . The house was founded in 1976 by Edith Rousseaux Édith and Didier Gondé , working on a rental area of 3.96 hectares. Since 2013, Florian Gondé has taken over the management of the estate and has evolved towards biodynamic viticulture, without certification. Champagne Gondé-Rousseaux practices gentle and creative oenology, with pressing and vinification in small volumes and the conviction that each of the plots of the vineyard is unique.
Haut des Roncières is made from Chardonnay grown on this plot planted at the top of the slope in 1993. The grapes are harvested when ripe and then pressed directly. The alcoholic fermentation occurs with indigenous yeasts in American oak barrels . The malolactic conversion is partial. The wine is aged under vacuum in barrels for 18 months . It was bottled on February 25, 2022 and is corked.
