Domain Justin Girardin - Corton Charlemagne 2019
Domaine Justin Girardin is located in Santenay, in the Côte de Beaune in Burgundy . The Girardin family has been present in Burgundy since 1570 and Justin represents the 13th generation to operate the family estate of 17 hectares. The vineyard developed from 1945: many lands were acquired in the form of meadows, fields or wasteland and replanted with vines. Today, the plots extend over the entire Côte de Beaune and the vines are replanted regularly by mass selection. The vineyard is managed according to the principles of biodynamics without certification.
The Corton-Charlemagne Grand Cru is made from Chardonnay whose average age of the vine is 55 years. After the manual harvest, the grapes are sorted 3 times and then pressed directly. Fermentation begins spontaneously with indigenous yeasts, then the wines are put into barrels as soon as the alcoholic fermentation begins to gain in complexity and obtain better integration of the wood. The malolactic fermentation is carried out in barrels with aging on fine lees. The wine is aged for 24 months in French oak barrels , 50% of which are new .
